About this coffee +

Rwanda grows some of the cleanest, most articulate coffee in East Africa, and Mbilima makes the case. This lot is Red Bourbon, the heritage variety behind most of Rwanda's finest cups, grown at 2,020 metres in the Coko Sector, where cool nights and serious altitude slow the cherry and stack the sweetness.

It is washed, picked and hand-sorted with the kind of care that shows up directly in the cup. Blackcurrant first, bright and definite. Nectarine behind it. Vanilla underneath, rounding the whole thing off.

We roast it light to medium every Monday at our roastery in Glasgow. High-grown, washed African coffees like this are what pour-over brewing was made for.

How we brew it +

Made for pour-over. V60 or AeroPress, medium grind, and give the bloom a full 30 seconds to let it open up.

As espresso it runs bright, so lengthen the shot a touch if you want the fruit without the bite.

Whole Bean: best if you have a grinder at home. Stays freshest longest.

Medium grind: V60, AeroPress, Chemex, Moka pot, cafetière, filter machines and drip brewers.

Fine grind: espresso machines including Sage, De’Longhi, La Marzocco and pressurised baskets.
