About this coffee +

Rio Brilhante comes from the Cerrado, the high plateau that made Brazil the reference point for sweet, chocolatey natural coffees. The lot is Yellow Catuai, a compact cultivar prized in Brazil for the sweetness it brings to the cup, grown at 1,050 metres above sea level.

It is a natural process coffee. The cherry dries whole in the sun before hulling, so the fruit sugars work their way into the bean over several weeks. That is where the chocolate, toffee and biscuit character comes from. No washing, no shortcuts, just fruit, sunshine and patience.

We roast it medium-light every Monday at our roastery in Glasgow, and it is the same single origin Brazilian coffee our own baristas pull as espresso across our coffee shops and restaurants. Built for espresso, brilliant in milk, and happy on any home brew method.

How we brew it +

Espresso is home turf. Start around 18g in, 36g out in 26 to 30 seconds and adjust to taste. It pours thick and sweet and cuts through milk.

For filter, cafetiere or AeroPress, go medium grind at 60g per litre. As easy-going a brew as we roast.

Whole Bean: best if you have a grinder at home. Stays freshest longest.

Medium grind: V60, AeroPress, Chemex, Moka pot, cafetière, filter machines and drip brewers.

Fine grind: espresso machines including Sage, De’Longhi, La Marzocco and pressurised baskets.
