Peru, La Coipa
The La Coipa farms sit in the Cajamarca region of Peru at 1,800 to 1,850 metres. Luis García and Noriel Mendoza farm these organically certified lands with the care and precision their altitude demands. Washed processing across raised beds and greenhouse drying lets each bean's character come through with clarity. Rich chocolate up front, honey in the middle, caramel on the finish.
Works well as a morning filter or a well-pulled flat white. One of our most consistent lots.
